Chicken Cacciatore with Creamy Mashed Potatoes

What you'll need:
about 4-6 red potatoes, cut up into chunks
1 bag of Birds Eye Steamfresh Garlic Cauliflower
1 lb package of Chicken breast
1/2c Light Balsamic Vinaigrette Dressing
1 pkg (8oz) fresh, sliced mushrooms
1 green bell pepper, cut up
1 yellow bell pepper, cut up
1 can (14.5oz) Italian style diced tomatoes
1/2c (1/2 of 8oz tub) Chive & Onion Cream Cheese
To Make:
Cook potatoes in boiling water until tender, about 15mins. Cook the cauliflower as directed on the package.
Meanwhile, cook the chicken. I cut up my chicken and cooked it with sea salt, cracked pepper, minced onion and garlic powder. Cook the chicken in a large nonstick skillet sprayed with cooking spray. Add dressing, mushroom and peppers and cook about 6 mins. Add tomatoes and simmer 8-10 more mins.
Drain the potatoes and return to pan. Add the cauliflower and cream cheese and mash mixture until fluffy. Serve topped with chicken and vegetables.
One serving, 1/4 of the meal, only has 340 calories and 10g of fat. The only negative of this meal is that there wasn't enough! There won't be any leftover for lunch!

ReplyDeleteI have a question, though....do you cook the chicken first, before putting it in the "nonstick skillet sprayed with cooking spray", as directed, or is putting in that skillet cooking where you cook it (in the dressing with mushroom and peppers)??
April- Cook the chicken in the nonstick skillet, then add the dressing, mushrooms and peppers, cook some more, then add the tomatoes and simmer.
